Abstract:
PURPOSE: To improve the operating efficiency and ensure the safety by automatically and continuously performing operations to fillet a fish into three of two slices of halves and the backbone and cutting the backbone.
CONSTITUTION: The apparatus for filleting an opened fish with the tail removed from the backbone is obtained by installing a fish body guide member 2 in the front and rear directions on a base, arranging conveyor belts for transferring the fish body (A) on both sides thereof, installing a pair of fish body incising blades 10 and 10 composed of rotating blades on the side of the rear end (2B) of the fish body guide member 2 in a nearly mid-fish plate 22 driven with a rotating air cylinder 23 on the lower side of the fish body incising blades 10 and 10 so as to fit the movable mid-fish plate 22 into the pair of the fish body incising blades 10 and 10 and further a backbone cutting blade 25 on the upper side so as to enable the lifting and lowering. A fish body sensor for starting the movable mid-fish plate 22 and a head center displacing device are installed in the base on the side of the rear end (2B) of the fish body guide member 2.
