To provide an apparatus for heat-treating food dough by which the food dough can precisely be transferred to a net conveyor of the following step with no attachment of the food dough to a net conveyor at the upper level.
The apparatus for heat-treating the food dough is equipped with a plurality of levels of a plurality of the net conveyors 3 in a hot-air drying chamber 2, and heat-treats the food dough while successively transferring the food dough put on the net conveyor 3 inside it from the net conveyor 3 at the upper level to the net conveyor 3 at the next level through a transfer conveyor 5 one by one by bringing the transfer conveyor 5 into contact with the net conveyor 3 at the upper level while pressurizing the transfer conveyor 5. A guide roller having protruded parts protruding outward by meshing with the mesh of the net conveyor 3 from the inside is installed. As a result, the dough 7 for a rice confectionery attached to the outside of the net conveyor 3 is dropped and returned to devoid part of each dough 7 for the rice confectionery on a transfer conveyor 5 and/or the net conveyor 3 at the next level.
