PROBLEM TO BE SOLVED: To inhibit oxidation of an oil and fat liquid used for cooking fried foods.
SOLUTION: An apparatus for inhibiting oxidation of the oil and fat liquid is composed of antennae dipped in the oil and fat liquid (11) and a controller (30) for controlling the antennae so that the antennae generate ultrasonic waves (50) at 42-86 kHz frequency in the oil and fat liquid.
