PURPOSE: To obtain an uniform rice cake having good taste and free from remaining granules without requiring to process into powder even when non- glutinous rice is used as a raw material by dipping a rice in water, kneading the dipped rice with steam, extruding the kneaded rice into a plate, passing the plate through rolls kept to pressed state and crushing the rice.

CONSTITUTION: A raw material of non-glutinous rice, etc., is fed into a rice washing machine 12 from a hopper 11 to wash the rice and then charged into a dipping tank 3 to dip the rice into water. Then the raw material is charged into steaming and kneading machine 5 to steam-cook and knead the rice and squeezed out from a taking-out part 51 as a rice cake dough. Thereafter, the rice cake dough is fed to a rice cake making machine 7 and passed through mutually pressed rollers 72 and the rice cake dough is crushed and lengthened to provide the product.
