Abstract:

To provide an apparatus and a method each for producing minute particles from food raw materials, especially from chocolate raw materials.

This apparatus works as follows: raw materials are heated in a dissolving device so as to be flowable, and the thus dissolved raw materials are supplied to a forming device having at least one nozzle for making the flowable raw materials drop down and a cooling device for hardening the minute particle-form raw material drops. To obtain structurally simple and more effective apparatus, it is desirable that the cooling device 20 has a cooling contact surface 20a movable based on a nozzle 19a.
