Abstract:
PROBLEM TO BE SOLVED: To provide an apparatus and method for inert gas-substituted packaging, capable of a large amount of inert gas substitution at a high substitution ratio; while conventionally encapsulation of bread or sponge cakes in an inert gas such as nitrogen has a low substitution ratio of inert gas due to air bubbles contained in porous bread and sponge cakes, with inadequacy for mass production.SOLUTION: An apparatus 1 for inert gas-substituted packaging includes an inert gas substitution device 1 for gas substitution in a bread 4 to be packaged by repeating decompression in a vacuum chamber 7 and subsequent compression in the vacuum chamber 7 with injection of inert gas at ambient pressure or higher, and a pillow packaging machine 3 for pillow-packaging the gas-substituted article to be packaged. A method for inert gas-substituted packaging includes repeating a plurality of times of the step of decompression and compression of the bread 4 at ambient pressure or higher with decompression in a vacuum chamber 7 and subsequent compression in the vacuum chamber 7 with injection of inert gas.
