Abstract:

To provide an apparatus and a method for lowering the dissolved oxygen concentration of a beverage without loss of flavor components, excellent in a hygienic viewpoint as well.

The apparatus for lowering the dissolved oxygen concentration of a beverage by exposing the beverage made into microparticles to an atmosphere at reduced pressures is provided. The beverage is made into microparticles by spraying the beverage under pressure to obtain the microparticles 50-1,000 μm in average size.
