Abstract:

To provide an apparatus for producing pasteurized liquid whole egg enabling reliable and efficient production of long-life pasteurized liquid whole egg holding physical property extremely similar to that of raw egg.

The apparatus for producing pasteurized liquid whole egg includes: an egg-breaking machine 1 equipped with an egg shell cutting means; a tube pump 2 unevenly crushing egg yolk masses while sending unfiltered liquid egg taken out from the egg-breaking machine 1; and a heat pasteurization device 4 heating liquid whole egg E obtained by crushing the egg yolk masses at a temperature lower than the coagulation temperature to pasteurize the liquid whole egg.
