Abstract:
To produce a seed malt free from various germs.
This apparatus for producing a seed koji (Aspergillus) is composed of a horizontally cylindrical pressure vessel 1, a seed koji feeder 16 installed so as to communicate with the pressure vessel and a pressure device 19 installed so as to communicate with the seed koji feeder 16. The apparatus for producing the seed koji comprises feeding the seed koji housed in the seed malt feeder 16 to the pressure vessel 1 while retaining the interior of the pressure vessel 1 under a pressure higher than atmospheric pressure by operating the pressure device 19 to prevent penetration of various germs.
