Abstract:

PROBLEM TO BE SOLVED: To provide an apparatus for treating a frozen bread dough, performing excellent fermentation and having a high area efficiency.
SOLUTION: In this apparatus for treating a frozen dough, equipped with an adjoining thawing chamber D and fermenting chamber F divided by doors and transporting trucks V from the thawing chamber D to the fermenting chamber F, the transporting routes for the trucks V in the fermenting chamber F are provided with buffering spaces 504 which are adjoined to the doors and do not stop the trucks V and the buffering spaces 504 are furnished with an air flow line for passing air in the direction approximately perpendicular to the transporting routes.
