Abstract:
To provide an aqueous dispersion improver for soy-protein-containing powder, which can be added to soy-protein-containing powder to improve its aqueous dispersion.SOLUTION: Aqueous dispersion improver for soy-protein-containing powder contains glycerine fatty acid ester as effective component whose constituent fatty acid is a 18 - 22C saturated fatty acid. In a method for improving the aqueous dispersion of soy-protein-containing powder, powdered glycerine fatty acid ester whose constituent fatty acid is a 18 - 22C saturated fatty acid and soy-protein-containing powder are made into flow state, mixed as water being sprayed, and dried. In a method for improving the aqueous dispersion of soy-protein-containing powder, powdered glycerine fatty acid ester whose constituent fatty acid is a 18 - 22C saturated fatty acid and soy-protein-containing powder are mixed.SELECTED DRAWING: None
