Abstract:
To provide a process for the production of arachidonic acid containing an oil, which is substantially free of eicosapentaenoic acid, and to provide a composition containing the oil having a high concentration of arachidonic acid in triglyceride form.
Mortierella alpina of filamentous fungi is cultured using a condition which yields triglyceride oil having particularly high level of the arachidonic acid. The biomass is harvested, and the oil is extracted, recovered, and used as an additive for infant formula.
