To provide an artificial milk which ensures thermal stability of the finish product comparable to milk although whey protein is present in a large amt. in the artificial milk, by controlling the compsn. of an artificial milk with partial substitution of whey and/or lactose.
The artificial milk is obtd. by using about 10 to 12wt.% skimmed powder milk, 5 to 9wt.% whey powder, about 7 to 10wt.% fat (preferably palm oil, coconut oil, corn oil or combination of them), about 0.1 to 0.3wt.% lecithin, about 0.02 to 0.03wt.% metal ion sealing agent (when a soln. method is used) and about 0.10 to 0.15wt.% metal ion sealing agent (when sterilization is carried out), and about 68 to 80wt.% soft water or water without minerals. The artificial milk is produced by a batch-batch continuous method or a method including a batch-inline arrangement.
