Abstract:

PURPOSE: To obtain the subject inhibitor rich in safety and processability, good in gustatoriness, and containing bacterial plaque formation-suppressive substance(s) extractable efficiently from inexpensive materials.
CONSTITUTION: This bacterial plaque formation inhibitor contains an extract obtained by extraction with a polar solvent (e.g. water, hydrous alcohol) from cacao mass treated with an alkaline agent or from cocoa powder produced by squeezing said cacao mass, or a product obtained by decomposing the extract with an acid, alkali or enzyme. The alkaline agent is e.g. a carbonate, bicarbonate or hydroxide of Na, K, Mg or ammonium, etc. It is preferable that the solubles of said cocoa mass or cocoa powder be extracted by addition of 3-10 weight times of hot water at 70-130°C. The enzyme to be used for decomposing the extract is e.g. a protease, dextranase, hemicellulase. This extract or decomposed product has significantly inhibitory activity against sticking to and build-up on the teeth of glucan due to Streptococcus mutans.
