Abstract:
PURPOSE: To provide a new bacteriocin which inhibits gram positive bacteria in a wide range of pH (the generic name of proteinous antibacterial substances produced by bacteria, which inhibits the growth of bacteria).
CONSTITUTION: Bacteriocin which is protein of about 6,000 dalton of molecular weight produced by Lactococcus lactis, particularly NRRL-B-18535, and has high antibacterial activity to gram positive bacteria within a range of pH 2-8 in foods or the like.
