Abstract:
PROBLEM TO BE SOLVED: To provide a baked sweet having its surface with a bouchee-like fine crack pattern.SOLUTION: A baked sweet dough contains starch for use in dough. Based on the starch of 100 pts.mass, the following ingredients are contained: oil and fat 35-55 pts.mass; moisture 20-30 pts.mass; and powder sugar 50-70 pts.mass. Preferably, the baked sweet dough further contains liquid sugar or concentrated juice with a Brix of 60 or more, of 2-10 pts.mass.SELECTED DRAWING: None
