Abstract:
PROBLEM TO BE SOLVED: To provide a bakery mix from which a bakery food product having a crispy texture can be produced, allowing the fresh-baked texture and flavor to be maintained for a long time.SOLUTION: The bakery mix for a fish-shaped pancake filled with bean jam, a pancake, or a waffle, which contains starch with a content of 30 to 95 mass%, milk protein with a content of 0.2 to 3 mass%, and an emulsifier. Preferably the milk protein is casein or a casein salt, and the starch is made from any one of corn, wheat, potato, rice, and tapioca.
