To provide a baking furnace capable of managing a dew point, controlling cooling gradient, and inexpensively manufacturing a baked substance with high reliability.

This baking furnace has a furnace chamber 1, a movable partitioning device 2, and an outer carrying port 7. An atmosphere gas can be introduced into the furnace chamber 1 from the external. The movable partitioning device 2 partitions the same chamber 100 of the furnace chamber 1 into a substitution space 101 and a baking space 102 by its partitioning motion. The outer carrying portion 7 has an openable and closeable shielding portion 70, and the furnace chamber 1 is opened outward at a part of the substitution space 101 of the furnace chamber 1.
