PURPOSE: To enable continuous production of baked food having excellent taste and flavor and free from scorch, by using a baking plate having minute through- holes, supplying a seasoning and scorch-preventing food oil to the reverse side of the plate and baking the objective food while permeating the food oil to the baking surface of the plate.
CONSTITUTION: A seasoning and scorch-preventing food oil is supplied to the reverse face of a baking plate 1 made of a porous heat-resistant material and having minute through-holes. Food to be baked (e.g. fish meat paste) is continuously supplied to the surface of the baking plate 1 while permeating the food oil from the reverse face to the baking surface and is baked on the plate. It is preferable to use the seasoning and scorch-preventing food oil as a heating medium and supply the oil in hot state.
