Abstract:
To provide barley that can effectively reduce the time and cost required for its malting process, and to provide a method relating to the same.SOLUTION: In a barley seed, the malt obtained by germination under conditions that the degree of soaking at the start of the germination is within the range of 43.5 wt.% or more and 44.5 wt.% or less, the germination temperature is 15°C, and the germination time is 40.5 hours or more and 45.0 hours or less has at least one of the following characteristics (1) to (3): (1) a soluble nitrogen content of 0.70 wt.% or more; (2) a Kolbach index of 43.0 wt.% or more; and (3) a β-glucan content of 440 mg/L or less.SELECTED DRAWING: None
