Abstract:
To provide a batter mix for a corn dog having crunchy palate feeling and being meltable in the mouth capable of forming coating without degradation in the quality according to the elapsed time.
The batter mix for a corn dog comprises 30 to 80 pts.mass of hard wheat flour in 100 pts.mass of the mix and an emulsifying agent. The content of the emulsifying agent is preferably 0.2 to 2 pts.mass based on 100 pts.mass of the hard wheat flour. Moreover, sodium stearoyl lactate and/or calcium stearoyl lactate is preferable as the emulsifying agent.
