Abstract:
To provide a food with a coating material capable of retaining crunchy texture of coating when time elapses after cooking, and to provide a coating material of the same.SOLUTION: A batter mix contains (a) a food starch composition which is obtained by heat-treating one kind or two or more kinds of potato starch selected from the group consisting of raw potato starch and modified starch of the raw potato starch, and a polyglyceryl fatty acid ester under a pressure condition of 0 MPa or more and 20 MPa or less, and contains a starch-lipid composite body.SELECTED DRAWING: None
