Abstract:
PROBLEM TO BE SOLVED: To provide a Baumkuchen production method in which a cheese-containing Baumkuchen can be made into a voluminous multi-layered roll shape, and Baumkuchen.SOLUTION: The method includes, when producing a multilayer roll-shaped Baumkuchen by repeating the operation of applying a batter composition containing a wheat flour and/or starch, a fat, an egg, a sugar, an emulsifier, and a cheese, to a core rod and burning the same, an emulsifier having a HLB of 11 or more, contained in said batter composition.
