Abstract:
To provide a carbohydrate-zero beer-taste fermented alcoholic beverage in which the thickness of the taste is achieved.SOLUTION: According to the present invention, there is provided a beer-taste fermented alcoholic beverage in which a malt and/or ungerminated barley is used as at least a part of the raw material and the carbohydrate concentration is less than 0.5 g/100 mL, and in which the ratio (percentage) of the mass of the peptide having a molecular weight of 800 to 1500 Da (HPLC analysis gel filtration method) in the beverage to the mass of all peptides of the beverage fractionated by a HPLC analysis gel filtration method is 17 to 45%.SELECTED DRAWING: None
