Abstract:
To provide a beer taste beverage that includes malt and/or un-germinated wheat as a part of raw materials, the beverage having a reduced unfavorable taste derived from the raw materials.SOLUTION: There is provided a beer taste beverage that includes malt and/or un-germinated wheat as a part of raw materials. A percentage (molar ratio) of amino acids causing an unfavorable taste, to all amino acids constituting a peptide with a molecular weight of 90 to 2600 Da (HPLC gel filtration) in the beverage, is 9.7% or less. The amino acids causing the unfavorable taste include valine, leucine and isoleucine.SELECTED DRAWING: None
