Abstract:
To provide a method for producing a beer taste drink using unpolished rice as one raw material, by which the drink reducing the undesirable peculiar tastes and bad aftertaste originated from the unpolished rice can be obtained.
This method for producing the beer taste drink using the unpolished rice as one raw material further uses colored malt as part of the raw materials. The EBC chromaticity of the colored malt is preferably 10 to 2,000, more preferably 50 to 500. The use ratio of the colored malt to the unpolished rice is preferably about 0.01 to 10, more preferably about 0.02 to 5, based on weight.
