To provide a sanitarily excellent beverage dispenser and a method of removing the extraction residue, which are capable of preventing the residue after extraction of a beverage from scattering in the periphery.

The beverage dispenser 1 comprises a filter layer 9 provided higher than the bottom 7a of a container 3 for dividing the inside of the container up and down, an agitation blade 31 for agitating the content of the container above the filter layer 9, an extraction port 11 provided on the bottom 7a of the container for taking out the extracted liquid permeating the filter layer 9, and a discharging port 23 provided at the center of the filter layer 9 for discharging the extraction residue. The beverage liquid is extracted from the material by loading the material and a liquid concentrate on the filter layer 9 to be filtered by the filter layer 9. After the extraction of the beverage, a washing solution is injected above the filter layer 9, and after that, the residue K is discharged from the discharging port 23 while the residual liquid is agitated by the agitation blade 31 to generate swirling flow.
