Abstract:
PROBLEM TO BE SOLVED: To provide a beverage manufacturing method for preventing deterioration of flavor of beverage by nitrogen substitution as well as sterilizing or providing antibacterial activity.SOLUTION: There is provided a beverage manufacturing system 100 having a degasification part 130 for reducing gas concentration in beverage and a superfine air bubble generation part 120 for generating superfine air bubbles in the beverage, and the superfine air bubble generation part has a storage part 123 for storing the beverage. A beverage manufacturing method using the beverage manufacturing system has a first degasification process for degassing the beverage and reducing dissolved gas concentration, a nitrogen bubble generation process for generating the superfine air bubbles by nitrogen gas in the degassed beverage, and a heat sterilization process for heat sterilizing the beverage containing the superfine air bubbles by the nitrogen gas.EFFECT: By nitrogen substitution of dissolved oxygen in beverage with superfine air bubbles by nitrogen gas, generation of smell of burning by heating sterilization in a post process can be prevented. The beverage is sterilized by physical energy which generates the superfine air bubbles.SELECTED DRAWING: Figure 1
