Abstract:
PURPOSE: To eliminate malodor, etc., and to allow the intake of iron while enjoying when the intake of the iron is needed on account of an anemia, etc., by incorporating heme iron into biscuits. CONSTITUTION: The heme iron is obtd. by adding water to the red cells obtd. from the blood of vertebrates, such as swine, adding enzyme, such as alkaline protease to these red cells to hydrolyze the red cells, removing globin protein as a supernatant liquid, washing the residues with water and subjecting the residues to filtering, drying and pulverizing. Next, the heme iron is thoroughly mixed together with sugar, cococa, sodium bicarbonate, etc. Butter is put therein and the mixture is whipped and thereafter, eggs are added thereto and the mixture is whipped. Soft flour is mixed with the mixture and the mixture is templated to a biscuit shape. The moldings are baked in an oven, by which the heme iron-contg. biscuits are obtd.
