Abstract:

PURPOSE: To obtain the titled blackening inhibitor, containing extract components extracted from Licorice or Licorice residue after extracting glycyrrhizin as an active ingredient, safe for food sanitation and remarkably useful for preventing blackening or crustaceans during a preservation and transportation period.

CONSTITUTION: The aimed blackening inhibitor obtained by blending (A) Licorice, Sophorae Radix and Licorice residue after extracting glycyrrhizin with (B) one or a mixture of two or more consisting of the group of alcohols, esters, ethers, ketones and halogenated hydrocarbons or a mixture thereof with water, preferably hydrous alcohols containing ≥20vol./vol.% ethanol in an amount of 5W8 times (weight ratio) and extracting the component (A) while heating and using the resultant extract of the naturally occurring raw material which has been conventionally utilized as a sweetener or crude drug as an active ingredient and capable of safely inhibiting enzymes, such as tyrosinase, causing blackening of crustaceans.
