Abstract:
PURPOSE: To obtain boiled rice suitable as a material for producing cakes and other processed foods and to produce delicious jam and paste having good pleasantness to the palate by using the produced boiled rice.
CONSTITUTION: Polished nonglutinous rice is washed with water or warm water, sufficiently immersed in water, dehydrated, mixed with milk, butter, lemon juice and a Chlorella-containing alcohol, put in a container, closed and heated and boiled from the outside of the container to produce boiled rice. Jam and paste are produced by using the boiled rice obtained by this method as a material.
