Abstract:

To provide bottle barley tea beverage having moderate flavor and sweetness, tasting with thickness because of salts, and having comfortable body when taking in a lukewarm condition at an ordinary temperature in addition to a low temperature.

In the bottled barley tea beverage, the total amount (mg/100mL) of starch and beta glucan is 60 to 200, the amount of maltose (mg/L) is 0.90 to 4.00, a soluble solid content derived from barley (%) is 0.30 to 0.80, and the ratio of the amount of furan-based compounds amount to the amount of pyrazine-based compounds is 1.65 to 9.50. Further, preferably the ratio of the total amout of sodium and potassium to the soluble solid content derived from barley is 33 to 57.
