Abstract:
To provide a bottled milk beverage with suppressed growth of heat-resistant end spore-forming bacteria and good flavor.SOLUTION: There is provided a bottled milk beverage containing 0.01 to 0.3 wt.% of (A) sucrose aliphatic acid ester obtained by a manufacturing method including a process for irradiating a micro wave to a mixture containing sucrose, aliphatic acid ester and/or aliphatic acid, 0.001 to 1.0 wt.% or more of (B) one or more kind of stabilizer selected from a group consisting of carrageenan, xanthan gum, fine crystal cellulose, and sodium caseinate, and 0.6 wt.% or more of (C) a milk solid component. There is provided a bottled milk beverage in which 70 mol% or more of a constitutional aliphatic acid of (A) is palmitic acid. There is provided a bottled milk beverage further preferably containing a coffee extract or a tea extract.SELECTED DRAWING: Figure 1
