A bread baking machine includes: a fixing base (F) in which a heating source, such as an electromagnetic induction heating device (H) or a gas burner is embedded, a baking chamber (B) which is loaded on the fixing base in a fixed state and has a front opening and closing door (33), a steam generating device (S) comprising a heating base (44) with a heating fin (45) heated by the heating source from below and a plurality of spray nozzles (47) for projecting water to the heating fin of the heating base from the circumference; a horizontal baffle plate (53) supported in a position located right above the heating fin to diffuse the superheated steam (A) rising from the heating fin of the steam generating device in the whole inside of the baking chamber; and a sirocco fan (50) mounted on a ceiling surface (31a), located to oppose to the steam generating device, inside the baking chamber and forcibly convects and circulates the superheated steam generated from the steam generating device in the whole inside of the baking chamber by the fan driven to rotate.
