Abstract:

To facilitate the kneading of a paste of bread with a butter and readily form the subject bread dough by laminating a square butter sheet onto a paste of rolled and thinned bread and rolling the resultant laminate.

A square butter sheet having ≤10mm thickness is laminated onto a paste of rolled and thinned bread and the resultant Iaminate is then rolled to regulate the thickness of the butter sheet to ≤1mm. The formed laminate is then folded from the front side and rear side to afford a three-layer structure. The obtained three-layer laminate is further rolled (to ≤0.1mm thickness of the butter sheet), extended and thinned (to ≤0.001mm thickness of the butter sheet) to provide a bread dough. Thereby, the laminated bread dough, comprising the laminated butter sheet therein and useful for the production, etc., of Danish bread can readily be formed.
