Abstract:
PROBLEM TO BE SOLVED: To provide a bread dough by which bread with satisfactory rise can be produced even in the case of a small sugar content, bread obtained from the bread dough, and producing method of the bread.SOLUTION: A producing method of bread has: a process of kneading a bread raw material containing wheat flour, soybean flour having water-soluble nitrogen index at 70 to 95%, and betaine to obtain bread dough; and a process of primary-fermenting to the bread dough primary fermentation to obtain bread dough. Then, the method has: a process of freezing the primary-fermented bread dough, secondary-fermenting (final-proofing) after freezing to obtain bread dough; or a process of final-proofing the primary-fermented bread dough, freezing the bread dough after final-proof to obtain frozen bread dough, and then firing or frying to obtain bread. Bread dough contains the soybean flour by 0.1 to 50 pts.mass to 100 pts.mass of the wheat flour, preferably by 0.01 to 20 pts.mass, and contains the betaine by 1 to 1000 pts.mass to 100 pts.mass of the soybean flour.SELECTED DRAWING: None
