Abstract:
PROBLEM TO BE SOLVED: To provide, in a bread making oil/fat composition containing enzyme, a bread making oil/fat composition that exerts an excellent effect on the bread softening and aging suppression.SOLUTION: Provided are: in a bread making oil/fat composition containing edible oil/fat and α-amylase, a bread making oil/fat composition containing (A) α-amylase having an optimal temperature of 70 to 85°C by 200 to 25000 units as an active amount and (B) α-amylase having an optimal temperature of 50 to 65°C by 10 to 10000 units as an active amount per 100 g of edible oil/fat; and a bread containing said bread making oil/fat composition.SELECTED DRAWING: None
