Abstract:
PURPOSE: To prevent difference in amount in mechanically dividing dough and damage of dough, provide bread having very fine texture and in case of producing bread for businesses, extremely delay a starting time of operation and lighten labor condition of bread making without forcing workers to make bread from a remarkably early time early in the morning.
CONSTITUTION: Dough of bread is kneaded, allowed to stand for a given time and aged and the aged dough of bread is shaped and baked.
