Abstract:
To provide an improved method for producing a totally baked bread product from a frozen pre-baked bread dough piece, the frozen pre-baked bread dough obtained by corresponding methods, baked products and improving agents for bread.
There is provided the process for producing a frozen, pre-baked dough piece able to yield a baked bread product by final baking, corresponding to the placing of the frozen, pre-baked dough piece in an oven at an oven temperature of 200 to 260°C for a time of five minutes or less.
