To provide a breast meat separation method enabling the separation of a muscular part excluding the part around the shoulder joint simply by applying a cut face and the processing of the shoulder joint part having plural ligaments, muscular substances, cords and membranes in a complicatedly entangled state by a proper separation means without damaging the breast meat and white meat of chicken presupposing the separation of the humeral head from the scapular glenoid cavity.
A fixing cone 20 is inserted into the galeate part 10 to position the shoulder joint 11. The tissues around the joint such as the ligaments, cords, membranes and muscular substances between the humeral head 12a and the scapular glenoid cavity 11b constituting the shoulder joint 11 are cut under application of separation force between the galeate part 10 and the humerus 2b to enable the peeling off of the breast meat 10a together with the wing in high yield.
