Abstract:

To provide brewed vinegar filled in a transparent container containing blueberry fruit, and a method for producing the brewed vinegar allowing a proper vinegar drinking time to be selected by seeing through an anthocyan extraction process of the blueberry fruit.

A plurality of grains of frozen blueberry fruit are put in a transparent bottle that can be substantially seen through, and brewed vinegar is hot-filled (fermentation stop treatment) at about 80°C. In the transparent bottle, a useful component containing anthocyan of the blueberry fruit is gradually extracted by the brewed vinegar, and an anthocyan tone is deepened in the brewed vinegar. At the same time, the blueberry fruit floating in an upper layer of the brewed vinegar gradually precipitates and settles at the bottom of the bottle. A consumer can select the vinegar drinking time suitable for himself or herself from the change of the anthocyan tone and the precipitation position of the fruit.
