Abstract:
PURPOSE: To perform the brewing of beer by fermenting wort having high concentration.
CONSTITUTION: A beer having high concentration is produced by fermenting wort having high concentration with a yeast containing a promoter of glycerylaldehyde-3-phosphate dehydrogenase gene and a structure gene of maltose permease under the control of the promoter. A beer can be produced by fermenting a wort having a concentration as high as about twice the extract concentration of conventional wort.
