Abstract:

PURPOSE: To prepare refined rice wines having diversified and improved qualities, light color and adjustable sweetness by using roasted rice as a raw rice and using the rice without immersion treatment.

CONSTITUTION: Roasted rice is used as at least a part of raw rice for the brewing of refined rice wine and at least a part of the roasted rice is used as brewing rice without immersion treatment.
