Abstract:
PROBLEM TO BE SOLVED: To provide a burning inhibitor capable of inhibiting burning of food and drink, occurring when sterilizing the food and drink by heat-treatment in production or a plate-type sterilization machine (for instance, a UHT sterilization machine), without affecting taste of the food and drink, a method for inhibiting by an easy method burning of food and drink to a production apparatus and a plate-type sterilization machine in heat treatment, and a method for producing food and drink for inhibiting burning.SOLUTION: A burning inhibitor of food and drink contains welan gum. The food and drink is a milk-containing beverage, and contains the burning inhibitor. A method for inhibiting burning of the food and drink includes addition of welan gum in the food and drink produced passing a heat treatment step. A method for producing the food and drink inhibiting burning to a plate-type sterilization machine includes adding welan gum to the food and drink produced passing the heat treatment step.SELECTED DRAWING: None
