Abstract:

To obtain butter-like milk fat composition capable of keeping soft structure even in cold storage, excellent in butter taste and useful as oil and fat, etc., for business by formulating butter with saccharide to soften the structure and spreading property thereto.

In this milk fat composition, preferably 10-40 wt.% saccharides such as sucrose or lactose is formulated with butter to soften the structure and spreading property thereto. Furthermore, the butter-like milk fat composition is obtained by adding saccharide to butter so that saccharide content becomes 10-40%, adding 5-10% water thereto and kneading these components.
