Abstract:
PURPOSE: To obtain a cake and a cake mix composition excellent in foaming properties, flavor and texture by extracting a cereal protein with an acidic aqueous solution at a specific pH or below or an aqueous solution at a specified alcohol concentration and blending the resultant fraction therein.
CONSTITUTION: The cake mix composition is obtained by extracting a cereal protein composed of wheat gluten or corn gluten with an acidic aqueous solution at pH≤6.0 or an aqueous solution at 10-70wt.% alcohol concentration and adding 0.1-20 pts.wt. resultant fraction to 100 pts.wt. wheat flour in a cake blend.
