PURPOSE: To obtain Ca-supplying drink containing Ca source derived from cow's milk having excellent digestibility and flavor, and having a slight problem of precipitation by separating and recovering from whey and whey permeate.
CONSTITUTION: Whey usually produced in preparation of cheese and casein as by-product and whey permeate obtained by ultrafiltration membrane treatment and deproteinization are heated and concentrate. Next, lactose contained in the whey in a large amount is partially crystallized and removed, then content of the lactose is reduced (hereinafter referred to as whey recovered mineral) to obtain Ca source derived from the above-mentioned cow's milk. Thus, to obtain said Ca-supplying drink with using the whey recovered mineral, the mineral is mixed so as Ca content in final product to be especially 100-200mg %. Next, about 5-15% sweetener and suitable amount of other additives are added to the mixture, and organic acid such as citric acid is added, then pH of resultant mixture is adjusted to especially 3.0-4.0 by lactic fermentation with lactic bacterium, etc., thus charged in a vessel for retail sale in heated state at a temperature of ≥80°C to afford a product.
