PURPOSE: Candies highly containing protein and fat without roughness, burning and browning by ultrafiltering precedent to distilling under a reduced pressure and carrying out each treatment in a specific condition.
CONSTITUTION: A concentrated milk containing 15-30wt.%, milk fat, 12-18wt.% milk protein and ≤15% lactic acid is compounded. In this case, 100 pts.wt. raw milk is filtered by a ultrafilter 1 to concentrate to 25-65 pts.wt., then the concentrate is distilled under reduced pressure at ≤70°C and the concentrated milk concentrated to ≤20 pts.wt. is compounded. After the concentrated milk is compounded, boiling down to concentrate is carried out by a continuous low temperature thickener under reduced pressure. Candies having high protein and high fat are produced without roughness, burning and browning.
