PURPOSE: To inexpensively obtain in a short time carrot beer contributing to preventing excessive alcohol intake and affording sufficient medicinal virtues inherent in carrot, and to provide a method for producing the carrot beer.
CONSTITUTION: This carrot beer which contains 0.25-0.30 wt.% of hop extract and 0.02-0.04 wt.% of carrot extract, is obtained by using, as the main stocks, malt ground product, hop, carrot ground product or carrot concentrated extract, yeast, and water; specifically, the carrot beer is produced through the following process: in the malt saccharification step during conventional beer production process, 100 pts.wt. of malt is incorporated with 0.2-0.4 pt.wt. of carrot ground product about 100 mesh in particle size to advance saccharification effect, or, 100 pts.wt. of saccharified mixed wort is incorporated with 0.02-0.04 pt.wt. of carrot concentrated extract.
