Abstract:

To provide a casein hydrolysate widely applicable as a protein raw material of an acidic drink, an acidic nutritive food, etc., various general foods, nutritive foods, feeds and medical agents, etc.

This casein hydrolysate has physicochemical properties such as (a) the decomposition ratio is 8-15%, (b) a non-protein state nitrogen compound is 200-350 mg per 1 g of the casein hydrolysate, (c) the amino acid score is 100, (d) no precipitate is generated when heated at pH4 and 100°C for 10 min, and (e) having no taste and no odor. The casein hydrolysate is obtained by adding a protease treated with a hydrophobic resin to a casein treated with a hydrophobic resin, and hydrolyzing it, and filtering the hydrolyzed solution.
